GRILLED HERB MARLIN WITH VEGGIES


Ingredients:

  • 1/2 cup minced fresh herbs ( basil, oregano and parsley)
  • 4 blue marlin fillets, 1-inch thick
  • salt and pepper to taste
  • 1/2 pc. lemon, zested
  • 1/2 pc. orange, zested
  • 2 tbsp. olive oil

Procedure:

  • 1. Pre-heat your grill medium-low heat on one side and high heat on the other side.
  • 2. pat fish dry with paper towels, and season both sides with salt and pepper.
  • 3. On a large plate, mix together the chopped fresh herbs, lemon, orange zest, olive oil and a little salt and pepper.
  • 4. Generously coat both sides of the fish with the herb mixture and allow the fish to marinate for 5 minutes.
  • 5. Grill fish on both sides until done. Just before serving, squeeze a little lemon juice or orange juice on top of the fish.

VEGGIES:

  • 100g marble potatoes, halved
  • 100g green beans, sliced
  • 1 pc. white onions, sliced 1/2 inch thick
  • 1 pc. corn, sliced
  • 1 pc. lemon, wedges
  • 2 spring fresh rosemary
  • 3 tbsp butter
  • 2 tbsp olive oil
  • salt and pepper to taste
  • foil

Procedure:

  • 1. Spread foil and place vegetables, lemon, herbs, and butter in the center.
  • 2. Drizzle with olive oil and season with salt and pepper.
  • 3. Fold tightly and seal, place in the grill until potatoes are done.
