Seared Tuna Salad with Mango Vinaigrette


Ingredients:
  • 100 red lolo roso, rinsed
  • 1 head romaine lettuce, rinsed
  • 2 cups baby spinach, rinsed
  • 1 cup cherry tomatoes
  • 2 tbsp oil
  • 300g tuna loin sashimi grade
  • Salt to taste
  • Freshly cracked pepper to coat tuna

Mango dressing:


Ingredients:
  • 2 pcs mango (reserve few slices for garnish)
  • 1/3 tsp ginger
  • 1/2 lemon, squeezed
  • 1/2 tsp Sesame oil
  • Splash of Soy sauce
  • 1/2 cup olive oil
Procedure:
  • 1. Place all ingredients in a blender until smooth. Set aside.
  • 2. Season tuna with salt and pepper. Pan sear and set aside before slicing.
  • 3. Assemble lettuce, spinach and sliced tomatoes, plate the tuna and drizzle with mango vinaigrette.
