Seared Tuna Salad with Mango Vinaigrette
Ingredients:
- 100 red lolo roso, rinsed
- 1 head romaine lettuce, rinsed
- 2 cups baby spinach, rinsed
- 1 cup cherry tomatoes
- 2 tbsp oil
- 300g tuna loin sashimi grade
- Salt to taste
- Freshly cracked pepper to coat tuna
Mango dressing:
Ingredients:
- 2 pcs mango (reserve few slices for garnish)
- 1/3 tsp ginger
- 1/2 lemon, squeezed
- 1/2 tsp Sesame oil
- Splash of Soy sauce
- 1/2 cup olive oil
- 1. Place all ingredients in a blender until smooth. Set aside.
- 2. Season tuna with salt and pepper. Pan sear and set aside before slicing.
- 3. Assemble lettuce, spinach and sliced tomatoes, plate the tuna and drizzle with mango vinaigrette.
